History
Olive oil is an ancient product. Olive trees were already cultivated in the Near East in 4000 BC. In Egypt, it was a sacred product, placed in sarcophagi to wish the deceased peace in the afterlife. In ancient Greece, athletes coated their bodies with olive oil to protect them from sunburn and falls. In The Odyssey, Homer called it “liquid gold”.
Before becoming a key culinary ingredient, olive oil in Spain by far the world’s largest producer today was used to care for the hair and skin, as well as to heal wounds.
Extraction
